The Kalamata PDO sfela cheese is a semi-hard white cheese that is matured and preserved in brine. It is a typical product of the southern Peloponnese, in particular of the regions of Laconia and Messinia.
Its production still follows the traditional process. The rennet is divided into parts and heated. It is then drained with gauze, lightly pressed and cut into strips (sfelas) and salted. These salty strips are then stored in tin cans filled with brine for at least three months. Small holes are created during the fermentation process of the cheese.
Sfela cheese is a great and healthy source of calcium, magnesium and protein.
Sfela cheese is excellent when cooked on the grill, but you can also include in in your omelets, salads or even sandwiches!
