FLAME GRILLED EGGPLANT, SALT, ACIDITY REGULATOR: CITRIC ACID
History: In 1957 a private company was founded in Politika, Evia, under the personal direction of Antonis Souliotis. Its main purpose was the production and distribution of high quality traditional Greek ready meals in the Greek and international market. Palirria remained a personal business until 1982, when it took on today's corporate form with the participation of his sons Antonis Souliotis, Kostas and Vassilis. From 2010 onwards, Palirroia concentrated even more on exports, which covered an increasing part of total sales. Today Palirria is the largest Greek exporter of ready meals and the world's largest producer of dolma. For 2014 the total production was 17,500 tons and more than 1,400,000 dolmadas were handcrafted daily. Palirria dolmadas have been awarded by two international organizations, the International Quality Institute in Brussels (Superior Taste Award) and the Fine Food in England (Excellent Taste Award).
