It's an excellent Cretan cheese. We could characterize it as dry Myzithra, and that's because it's the dry version of soft Myzithra. The main reason for making it was a lightly salted cheese that could be grated. It belongs to the whey cheese category.


60% sheep milk, 30% goat milk, 10% cow milk and whey (fresh and dehydrated).

Characteristics: The dried Anthotyros from Kalogerakis is prepared like the sweet Mizithra, but with the special repetitive drying feature, that lasts a few weeks, in specially formed ripening systems immediately after processing. It is considered a high quality cheese. It's especially popular at Cretan weddings, whose traditional cuisine consists of juicy spaghetti cooked in local broth and drizzled with a fairly large amount of cream cheese.

Texture and color: it is a semi-hard white cheese without holes, with a rough surface and a coating on the rind.

Taste: It is characterized by an intense, salty and buttery taste.
